Ok so I created this I think.
To make it you will need:
- corn tortillas
- hummus (any spicy)
- lettuce, aguacate
- heirloom tomate
- lemon juice or rice vinegar
- tahini
- ground chicken (cook in evoo and seasoned w/ adobo, curry, cumin, ginger, ground cinnamon, onion powder, garlic powder, crushed red pepper, add onions, mushrooms and fresh garlic)
- quinoa mixed w/ wild rice (toasted in a little evoo and boiled in chicken boullion)
- lentils (boiled with curry, cumin, peppercorn, cinnamon stick, ginger, crushed red pepper, 3 cloves, onions, garlic, salt)
Assemble:
- spread hummus and tahini on pan toasted corn tortillas
- add fresh veggies
- top w/ chicken
- drizzle w/ lemon juice or rice vinegar
Scoop quinoa and lentils and eat on the side. If u want it veggie you can substitute for chicken.
